How many out there have ever heard these words? “Don’t make me come in there.” Those were words to put the fear of God into every one of us growing up. When we heard those words, we knew we had pushed that last button, broke the camel’s back and frazzled that last nerve.
When Momma Said those infamous words, we knew to duck and cover. My sisters found out one day what would happen when Momma Said, “Don’t make me stop this car.” Suffice to say, they never acted up in the car EVER again. It is funny to look back on those times now, but she seemed to be ten feet tall when those words came out of her.
We never looked at it as her abusing us because that was just the way things were done back then. You took your punishment when it was doled out because you knew you had done something wrong. We didn’t like it, but it was inevitable, so we sucked it up and went on with life.
That way of life taught me to respect my elders and to make more sensible judgment calls. Momma Said, “Stop and think of the consequences of your actions before you put them into play.” I think the government needs someone like mom to oversee them. If she got up in the Senate and said over the loud speaker, “DON’T MAKE ME COME DOWN THERE!” I think a few officials would be scrambling for the door.
All of us kids miss her and wish we could hear those infamous words just one more time, but time marches on and so must we. I will share another sweet with you this week because it seems to be the season for peaches now. Find some juicy ones in the store or at your local farmers markets. This will make you stand up and shout.
Peach Upside-Down Cake
Ingredients
· 1/4 cup butter
· 1/2 cup packed brown sugar
· 2 to 3 fresh peaches, sliced
· 1 1/4 cups all-purpose flour
· 1 1/4 teaspoons baking powder
· 1/4 teaspoon salt
· 1/2 cup butter, softened
· 3/4 cup granulated sugar
· 1 egg
· 1 teaspoon vanilla
· 1/2 cup milk
Directions
1. Place 1/4 cup butter in an 8x8x2-inch baking pan. Warm in a 350 degrees oven about 5 minutes or until butter is melted. (Be sure to watch carefully to avoid browning the butter). Remove pan from oven. Add brown sugar, stirring until sugar is completely moistened. Spread sugar mixture evenly in pan. Arrange peach slices evenly over brown sugar mixture. Set aside.
2. In a medium bowl, combine the flour, baking powder and salt; set aside. In a large bowl, beat 1/2 cup butter with an electric mixer on medium to high speed for 30 seconds. Beat in granulated sugar until well combined. Add egg and vanilla, beating until combined. Alternately add the flour mixture and milk to beaten butter mixture, beating on low speed after each addition just until combined. Spread batter evenly over the peaches in the pan.
3. Bake for 45 to 50 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on wire rack for 5 minutes. Loosen cake from sides of pan; invert onto a large serving plate. Cool for 10 to 15 minutes more. Serve warm.
