Meet Amber!

The search is over, I have found a puppy! She is an English Shepherd and looks a little like Lassie. Her name is Amber and she is settling in well with the other pets at home. Momma Said, “After 11 years of not having a puppy, I forgot how much work they are.” But she is a good girl and learning fast.


It has been a bit of work and my biggest problem is that I have a picket fence around the back yard and she is just small enough to squeeze through. I have to keep a sharp eye on her until she gets a little bigger. She is sleeping through the night and only a few accidents so far.

Picnics will be picking up soon and you always have to have watermelon. I did not know that there are boy and girl watermelons. Who knew? A boy watermelon is tall and more elongated while a girl is round and stout. Momma Said, “Those are not words you want to use while describing a human female!” The boy is more watery where a girl is sweeter. Also, when picking a watermelon for ripeness, the ground spot should be a creamy or orange yellow.

If you are having good weather, enjoy it, get outside and have an old fashion picnic with friends and family. That was our kickoff to summer when we were in grade school. The last week of school we always had a community picnic and everyone came, even if you did not have kids in school. I miss those days so much. Not many of the original people left in our little town.

Grilled Huli Huli Chicken

Ingredients

  • 4 pounds boneless skinless chicken thighs, chicken breasts also work
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons fresh ginger root, grated
  • 1½ teaspoons minced garlic
  • green onions, sliced for garnish

Instructions

  1. In a medium sized bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger and garlic. Reserve 1 cup sauce for basting. Add the chicken thighs and sauce to a ziplock bag and marinate at least 3 hours or overnight.
  2. Grill chicken, covered, over medium heat for 6-8 minutes on each side or until no longer pink. Baste occasionally with reserved marinade during the last 5 minutes. Garnish with green onions, if desired, and serve with grilled pineapple.
