Memorial Day is here again and I am sure another of our old traditions is going to the wayside. Visiting the graves of family and friends and placing flowers in remembrance.
That was always a family outing with Mom, Gran and all the kids. We would clean the grave markers and place flowers on all the family graves. That is something I still do today.
Kids today are too quick to forget. To quick to forget the sacrifices mom, dad and grandparents made for them. It is a real shame that once a loved one has passed that people show no respect for them by remembering them at least one day a year. I have not missed a Memorial Day or Christmas since Mom and Gran passed.
I think that everyone in America should visit Arlington National Cemetery at least once in their life on Memorial Day. It is a very solemn occasion to see all the flags lined up on the graves. Momma Said, “Some gave all and they deserve our respect.” Please take a minute out of your day and thank a soldier for his or her service to our country, even if it is just a silent prayer for their safety.
I hope everyone has a safe holiday and eat a hotdog and a slice of watermelon for me. If you are traveling, be safe, Momma Said, “Don’t drink and drive, don’t text while driving and make it to your destination and home again safely.”
Old Fashion Raisin Pie
Ingredients
4 C. water
4 C. raisins
1 C. light brown sugar
5 T. cornstarch
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. lemon juice
3 T. butter (not margarine)
1 tsp. vanilla extract
2 – 9″ deep dish pie shells
Directions
Combine raisins and water in a med. pot, bring to a boil and cook for 5 minutes. Blend the brown sugar, cornstarch, cinnamon and salt together, slowly stir into the hot raisins.
Cook and stir until the syrup has thickened (happens pretty quickly). Remove from heat and stir in the lemon juice, butter and vanilla. Cool slightly.
Pour the raisin filling into a pie crust, place the other pie crust on top, sealing the edges by pinching them together. Use a knife to make a couple of slits in the top of the pie. Bake in a 425 degree oven for 30-35 minutes.
