Another birthday has come and gone. I had some wonderful friends stop by and wish me well. I hope I am around for many more and my friends can visit anytime. Momma Said, “It seems a blink of the eye that I was that young spry thing and now I guess I am all grown up.” I do wish mom was here but I know she still wishes me well. Had some awesome apple dumplings in place of birthday cake and they were wonderful. You have to mix it up once in awhile so we went “cakeless” this birthday.

I thought I was all done with canning but I guess not. This past week I started another crock of sauerkraut and my brother and I canned more salsa and cabbage and hot peppers. I guess I am officially a “prepper”. If the end of the world comes anytime soon, I will we will be able to eat for some time.

The canning is done for now, we got ten quarts and 20 pints of salsa. The kraut is still working and the cabbage will be finished soon. Momma Said, “The kids will eat great this winter.” I have worked very hard this year, but it was worth it to see all those beautiful jars of food. It will save a lot at the grocery store this winter.

Made a pot of chili soup this weekend and used some home canned tomatoes and juice. It really tasted good on a rainy Sunday afternoon. Momma Said, “A bowl of homemade soup is good for the soul.” It just makes you feel like you are wrapped in a warm fuzzy blanket.

Since I didn’t have a cake for my birthday, I will leave you with a good recipe for a new way to make a cake for you and your family, so I hope you enjoy it.

 

CRAZY CAKE RECIPE (NO EGGS, MILK, BUTTER OR BOWLS)

Ingredients

 

 

•1 1/2 Cups flour (all-purpose)

•3 Tbsp. cocoa (unsweetened)

•1 Cup sugar (All purpose sugar – Granulated Pure Cane Sugar)

•1 tsp. baking soda

•1/2 tsp. salt

•1 tsp. white vinegar

•1 tsp. pure vanilla extract

•5 Tbsp. vegetable oil

•1 Cup water

 

Directions

Preheat oven to 350 degrees F.

 

Mix first 5 dry ingredients in a greased 8″ square baking pan. Make 3 depressions in dry ingredients – two small, one larger. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression. Pour water over all. Mix well until smooth.

 

Bake on middle rack of oven for 35 minutes. Check with toothpick to make sure it comes out clean. Cool. Top with your favorite frosting.
