We are having a beautiful break in the weather today. It seems like it has been rainy and overcast for a month. I feel as if I have been transported to Oregon. Momma Said, “Enjoy each day for it is God’s gift to each of us.” I really enjoy the sunshine and warmer weather.
Disaster has struck the home front again. My dog “Abby” now has to have surgery on her leg. The ligament that holds her kneecap in place snapped and she can’t lower her leg. It happened to her other leg some years back and surgery was successful in keeping her mobile. So when they get done, I might have the bionic dog. Able to leap tall fences in a single bound.
A neighbor gave me some squirrels this week and I decided to get creative and can them. Turned out great, I got five quarts and now when I want some squirrel and gravy all I have to do is open a jar, brown the meat and make the gravy. Momma Said, “YUM YUM!”
This week has been hectic and it seems I haven’t got anything done. I guess I am getting ready for winter hibernation because I am sleepy all the time. Momma Said, “The faster I work the behinder I get.” That was another euphemism mom liked to use. She worked harder than anyone I know.
I do my best and I like to think that if she were still here with us, she would be proud of me. I am not as strong as she was, but in the past few years I have learned that hard times call for hard measures. I like to think I can stand with the best and dish out as good as I get.
But for now, I will say to you, “Children, love your mothers and Mothers, love your children because life is too short to waste time bickering amongst yourselves. Love each other as if today is your last.” I will give you a good recipe to sweeten any disposition so enjoy.
PEANUT BUTTER MICROWAVE FUDGE
This will be great to put in cookie tin for a gift!!!! …
1 lb box Confectioners sugar
2 T butter
1/3 C milk
1 C peanut butter
Place sugar, butter and milk in a large mixing bowl. Cook in the microwave 2 minutes on high. Take out, beat ingredients with hand mixer until combined. Microwave 30 seconds more, then add peanut butter and mix by hand or mixer until combined. Spread in foil lined 8×8 pan. Let cool then cut and ENJOY! Everyone will LOVE this!!!!!!!
