Memorial Day is on the horizon and I would urge everyone to remember the men and women who fought and died for our country and freedom. I appreciate everything they have done and continue to do for us. But it saddens me to see so many younger people who feel that the very freedom they take for granted is something to sneer at.
I see pictures of people stomping the flag on the ground and burning it in public places. I don’t think they have any concept of what has been lost so they can abuse the very essence of our country. I would like to see them go to some third world country and endure the hardships that our soldiers have been fighting against. Momma Said, “You don’t know what you have until it is gone.”
At the rate our country is going these days, they may not have to travel very far to see those hardships. I say if you don’t like what our country stands for, there is the door and I will help them pack. I am proud of our country, the mountains, the plains, the rivers and valleys, all of it unique and beautiful. We don’t need identification to cross state lines and we can travel from shore to shore without road blocks and check points.
So, this Memorial Day, remember your loved ones who have passed and give thanks to a soldier. Momma Said, “Most have sacrificed something, but some have sacrificed everything.” It is a small gesture on your part, but it means the world to that soldier to know people still care.
Baked Parmesan Zucchini Fries
Ingredients:
• 4 zucchini, cut into “fries”
• 1/2 cup grated Parmesan
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried basil
• 1/4 teaspoon garlic powder
• salt and freshly ground black pepper, to taste
• 2 tablespoons olive oil
Directions:
Preheat oven to 350 degrees
In a bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper
Dip zucchini in olive oil, coat in Parmesan mixture, place on baking sheet covered with parchment paper.
Bake 15 minutes. If not crispy enough, broil for an extra 2-3 minutes until golden brown.
