The weather is in the news from coast to coast and it is not good. The East Coast gets slammed with record breaking cold and the West Coast is burning up, literally. Now the West Coast is trying to recover from massive mudslides, my heart goes out to all those affected, and the East Coast is bracing for another winter blast. The middle part of the country is fairing no better. Momma Said, “Whatever hits the West Coast is eventually coming east so we all brace and hope for the best.
I am writing this on Friday, Jan. 11 and I just shot a picture of a rainbow from the front porch of the office. It is hard to believe that it is 63 degrees and pouring the rain here in the middle of January and tomorrow it is not supposed to get out of the 20’s with ice and snow. Momma Said, “Something screwy is going on with this ole planet.”
I remember as a kid that it would start snowing around the first of October and it would not stop until the end of March. This year is the first year we have had a white Christmas in a number of years. I don’t mind the warm weather but with it comes rain and I think Amber should have been a pig instead of a dog. I have never had a dog that enjoyed getting dirty as much as she does. With the feathers on her legs and the skirt around her butt, she is a mess every night I get home from work.
I just have to let it dry and brush it out, there is not way I can give her a bath every night. Momma Said, “Oh. Lord, what have I done?” I was so spoiled with Abby because she did not like to get dirty. If it was raining, she would tiptoe out to do her business and then run right back in to get dried off by Mommy. Not this “Wild Child” OHHHH NOOO! She has dug holes all over the backyard and what she has not dug up she has made into a race track. She runs the fence and barks at everything. I was told that English Shepherds were very territorial, but she is taking it to the limit.
I either pray for snow to cover the mud or dry weather to dry everything out. Momma Said, “Until then, I guess I am stuck with the proverbial DIRTY DOG!!!!
Bacon and Egg Pie
Ingredients
- 2 sheets puff pastry
- 1 onion, finely diced
- 6 slices bacon, chopped
- ½ cup mixed vegetables drained(peas, corn or very well drained spinach)
- 6 eggs
- milk or egg yolks
Instructions
- Pre-heat oven to 180˚C or 160˚C fan-forced. Grease a 20cm square cake pan or dish and use 1 sheet of puff pastry to line it.
- Sprinkle onion, bacon and mixed vegetables evenly over pastry. Break eggs evenly over, pricking the yolks so they run slightly.
- Carefully lift the second sheet of pastry over filling. Fold pastry edges over press down with a fork.
- Brush top with milk or egg yolk.
- Bake for 40 minutes until well risen and golden. To serve cut into squares. Serve hot or cold
