When someone wants to get rid of something and in the advertisement they state “As Is” that means you take what you get. Well I have a six month old puppy that I will give away “As Is.” You can have her with all her quirks and smelly breath. I think I am about ready to give up on her. Her latest antic is that she chewed up my bedspread. It is a comforter with the batting inside, well it is all on the outside now.

I need Cesar Millan to come and give me and Gracie some help. I have never had a dog quite like this one. I just wanted a nice puppy to play with Amber and to enjoy myself. Could I get that? NOOOOOOOOOOOOOO! I will just have to deal with her and hope she grows out of it. Momma Said, “Finish what you start, don’t be a quitter.”

I hope everyone had a great Fourth of July, with no injuries or illness. I babysat the nervous dog, Amber, and we made it through with not much drama. I don’t know if any of the organizations that usually put off the big fireworks got to do that this year. I know the City of Thomas usually generated most of their yearly revenue from their celebration but it was canceled this year.

2020 is going to be a year for the record books. Now I understand that those in the know are predicting we will surpass 100,000 new cases of COVID-19 every day. That is a lot of sick people. I hope it does not get to the point of however careful we are eventually we are going to get it. I don’t know anyone personally that has had it. In our area we are not as crowded as big cities. Momma Said, “I wish I had dug that bunker before this all happened.”


Magic Chicken Pie

INGREDIENTS

  • 6 tablespoons butter, cubed
  • 2 cups Bisquick baking mix
  • 1 1/2 cups milk
  • 1 1/2 cups chicken stock
  • 1 (10.5 oz.) can cream of chicken soup
  • 2 cups cooked chicken, shredded
  • 2 cups fresh or frozen mixed vegetables
  • 1/2 white onion, chopped
  • 1 cup cheddar cheese, grated

PREPARATION

  1. Preheat oven to 350°F.
  2. Place butter in the bottom of a 9×13-inch baking dish. Place dish in oven until butter is melted, then remove.
  3. Meanwhile, whisk together the milk and baking mix in a large bowl. Set aside.
  4. In a separate bowl, whisk together the chicken stock and soup. Set aside.
  5. Arrange the casserole in the following layers, but do not stir.
  6. First, arrange chicken evenly over the melted butter. Arrange vegetables evenly over the chicken, followed by the onion.
  7. Sprinkle cheese evenly over the onion then pour the Bisquick batter evenly over the top. Pour the soup-stock mixture over the Bisquick.
  8. Bake until top is beginning to brown, 45-50 minutes. Let rest 10 minutes before serving. Enjoy!
