Well, here we are ready to close out another year.  It went by so fast that I had to stop and make sure I wasn’t in a time machine or something.  Momma Said, “Make every moment count you never know when it will be your last.”  I try not to procrastinate but sometimes I find myself wondering off into the ether and time just slips by.

I try to stay busy and make the most of the time I have.  And now I am happy because the Winter Solstice has past and there is more daylight every day.  I don’t guess we can really complain so far because the weather has not been that bad in our area.  Although, at the time I am writing this we are supposed to get some weather moving into our area in the next couple days.  Attention:  Update to come!!

I hope everyone had a great Christmas and try to have a safe New Year celebration.  I for one will sleep through it as I have for years and years.  Go to sleep one year and wake up the next, I guess I could be Rip Van Winkle but I really don’t want to sleep that long.  Momma Said, “I guess a little Beauty Sleep couldn’t hurt (but I would need a few years of it to see any results) Ha Ha Ha Ha.”

Go forth into the New Year and make the most of whatever is thrown at you.  You are the pilot of your own destiny so steer that ship towards the stars and make the most of every minute of every day.

 Chicken and Dumplings

Recipe:

pulled chicken from a rotisserie chicken (no skin)

1 stick of butter, melted

1 cup milk

1 cup self-rising flour (must be self-rising)

2 cups chicken broth

1 can condensed cream of chicken soup

Preheat oven 375°

Spread chicken in a 9×13 baking dish

Pour butter evenly over chicken

Season with a little salt and pepper

In medium bowl, whisk together flour and milk. Slowly pour evenly over chicken. Do not stir!

In same bowl, whisk together chicken broth and chicken soup. Slowly pour into baking pan. Do not stir. Dumplings form as it bakes.

Bake uncovered for 45 minutes.  Let sit for a minimum of 5 minutes before serving, allowing dumplings to finish forming. The longer it sits the more dumplings you get. Just as good the second day.
