Momma Said, “Sometimes in life a little rain must fall but what this area got last week was insane.” Not right in my area but the counties around where I live got washed away. It was so bad that a lot of businesses have to get completely torn down.
Some businesses say they are not even going to reopen and that is devastating to a smaller town like the ones that got hit. We had 9 confirmed tornadoes and that is something that is getting more and more frequent. We never had this kind of crazy weather when I was growing up so times are changing.
I am really sad to think of the devastation that these people have suffered and must start completely from scratch. And to think, a few weeks ago I was complaining over a small water line break. Momma Said, “You really have to stop and think of what you have and be grateful.”
I wish them all the best and hope that some semblance of normalcy returns to their lives very soon. I know they have lost a lifetime of memories and some things that cannot be replaced so please keep them in your thoughts and prayers.
Buttermilk Fried Chicken Tenders
For the Chicken and Marinade
2 cups buttermilk
1 tablespoon hot sauce (optional)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
1⁄2 teaspoon black pepper
1 1⁄2 pounds chicken tenders
For the Dredge
2 cups all-purpose flour
1⁄2 cup cornstarch
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper (optional)
1 teaspoon salt
1⁄2 teaspoon black pepper
1 teaspoon baking powder
For Frying
vegetable oil
Instructions
• Preheat your air fryer to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
• Add the beef, pork, parmesan cheese, breadcrumbs, egg, garlic, and salt to a large bowl. Use your hands to mix everything thoroughly.
• Form the meat mixture into 16 evenly-sized balls. Place them on the lined baking sheet.
• Place half of the meatballs into the air fryer basket. Cook for 8 minutes.
• After 8 minutes, give the basket a good shake. Then, continue cooking for 2 more minutes.
• Transfer the cooked meatballs to a serving plate. Let them rest for 5 minutes before serving.
• Repeat steps 4-6 with the remaining meatballs, and enjoy!
