The chilly weather is not ready to relinquish its hold just yet. The daffodils are up and I have seen azaleas blooming in some parts of the surrounding counties. Spring will come but it is hard to wait out the dreary weather until then. Momma Said, “Good things come to those who wait.”
I really need to get in the mood to do my spring cleaning, but for some reason I think my mood meter must be broken. I used to have a mood ring and I broke it too. It always seemed to stay black for some reason. I think my get up and go, got up and went.
I never used to be such a procrastinator but as I get older it seems like things aren’t so important that I have to get everything done right now. So “right now” has turned into “soon” and then sometimes soon turns into “whenever” and the dust bunnies just keep on rolling.
The dogs really help in the dust bunny department. When you have two long haired dogs, you can just imagine the mess I deal with. I pick up enough hair every day to make another dog. But I wouldn’t trade them for anything. They are good girls and I love them, so I deal with the mess. Momma Said, “Don’t take on the responsibility if you are not worthy of the challenge.” So go out everyday and do your best.

CHOCOLATE FUDGE PUDDING CAKE

INGREDIENTS
· 1 c. all purpose or cake flour
· ½ tsp. salt
· 5 Tbsp. unsweetened cocoa powder
· 2 tsp. baking powder
· 1 c. granulated sugar
· ½ c. milk
· 2 Tbsp. unsalted butter, melted
· 1 tsp. vanilla or almond extract
· ½ c. brown sugar
· 2 c. hot water
· Optional:
· cherry pie filling
· vanilla ice cream

INSTRUCTIONS
Combine flour, salt, 2 Tbsp. cocoa powder, baking powder, and ½ c. granulated sugar in a 2 quart baking dish.
In a separate bowl, combine milk, melted butter, and vanilla or almond extract.
Mix into dry ingredients until fully combined.
Combine remaining 3 Tbsp. cocoa powder, ½ c. granulated sugar, and brown sugar.
Sprinkle over cake batter.
Pour hot water evenly over batter mixture.
Bake at 350 degrees for 30-40 minutes, or until top of cake is set.
Spoon into individual dishes; top with cherries and ice cream as desired.
