Hopefully winter is winding down and spring is on the horizon. I will have to say this year we can say we had a winter like that of old. I don’t remember temperatures like we had this year in quite some time. Momma Said, “I wanted the ground to freeze and it sure did.” It is just another season to put in the books and I can say I am glad that chapter is done.

I will be glad to get outside and get started cleaning up the yard, it is a mess after all the snow and ice. Mom would probably be mowing grass by now. She was an animal when it came to her yard and she would have been chomping at the bit to get at it for another year. I can still see her out with her red bandana wrapped around her hair curlers.

I had never nor have ever met someone with her work ethic. She could get more done in a couple hours than most people can do in an entire day. I have tried to keep her spirit alive by doing as she did, but I am having trouble with my feet and when they really start to hurt, I have to quit. Momma Said, “Sometimes as hard as you try, you just can’t achieve greatness and she was once in a lifetime greatness to me.”

I’m sure everyone says that about their own mother, but she was my inspiration and my role model. I know everyone has their faults and she was no exception, but to me as a kid she was Super-human. Just one of those things you think back on say, “I hope someday I can be just like her.”

This column is about tips, helpful hints, recipes and words of wisdom. I don’t say I know it all, Momma Said.


Applesauce Cookies (Old-Fashioned Recipe)

Ingredients
• 1 cup packed brown sugar
• 3⁄4 cup shortening or butter
• 1 egg
• 1 cup applesauce
• 2 1⁄2 cups all-purpose flour
• 3⁄4 teaspoon ground cinnamon
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon ground nutmeg
• 1⁄4 teaspoon ground cloves
• 1 cup chopped walnuts
• 1 cup raisins

Instructions
• Preheat the oven to 375 degrees Fahrenheit. Line 2 cookie sheets with parchment paper.
• In a large bowl, beat the sugar and shortening with an electric mixer until smooth.
• Stir in the egg and then the applesauce until well blended.
• In a separate bowl, combine the flour, cinnamon, baking soda, salt, nutmeg, and cloves. Stir the dry ingredients into the applesauce mixture.
• Fold in the walnuts and raisins.
• Drop spoonfuls of dough 2 inches apart on the prepared cookie sheets.
• Bake in the preheated oven until the edges are golden brown, about 10 to 12 minutes.
• Cool the cookies on the baking sheet briefly before removing them to a wire rack to cool completely. Enjoy!
