When life knocks you down you have to get up and just keep going. I have known all my life what one step forward and two steps back means. It is a hard world to live in these days and I am so worried about the state of affairs today. We live in a world where everything can turn on a dime and your life is shattered beyond belief.

Really, what would we do if our country turned into Ukraine? It could happen anytime and there is nothing we could do. Our problem is, unlike Ukraine, we would probably be hit by nuclear weapons and that would be that. Momma Said, “Just kiss it all goodbye.”

Actually, it would only take one lucky hit with one rocket in the Yellowstone Basin and the volcano under the park would do the rest of the work for them. That would be much worse than the eruption of Mount St. Helen, which could be seen from space.

We would be in a nuclear winter just from the ash fallout. We, as a whole, take our freedom so casually that if something were to happen, most of the population of the United States would not survive the first wave of panic. I cannot say I am prepared to survive but I know I can exist just from sheer will. Momma Said, “There is no quit in this ole girl.”


Mixed Berry Crisp

Ingredients
Filling
• 6 cups mixed berries (raspberries, blackberries, blueberries, strawberries, even rhubarb)
• ½ cup granulated sugar
• 3 Tablespoons all-purpose flour
Topping
• 1 cup all-purpose flour
• 1 ½ cups old-fashioned oats
• 1 cup brown sugar
• ¼ cup granulated sugar
• 1 teaspoon ground cinnamon
• ¾ cup salted butter, melted
• vanilla ice cream for serving

Instructions
• Preheat oven to 375°F.
• Toss berries, sugar, and flour in a large bowl. Pour into an 8×8-inch baking dish, pie plate, or 2 tart dishes.
• Combine flour, oats, brown sugar, granulated sugar, and cinnamon. Add melted butter. Stir until evenly moistened. Sprinkle over the fruit filling.
• Bake for 35 to 40 minutes until golden brown on top and the fruit is bubbling. Serve
• warm with ice cream.

Notes
• Add 3-5 minutes to the baking time if using frozen fruit. No need to thaw first.
• Storage & Make Ahead
• Store: Keep any leftovers in the fridge in an airtight container for up to 3 days.
• Freeze: Wrap the entire dish or individual portions and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
• Reheat: Warm the crisp in the oven at 350°F for 15-20 minutes or microwave individual portions for a quick reheat.
• Make Ahead: Prep the berry filling and crisp topping separately and store them in the fridge. Assemble and bake just before serving for the freshest result.
