Father’s Day has come and gone again and the best father I ever had was my mother. I cannot remember a time when dad played ball with us or just about anything else. We played with the neighbors or made our own fun, but just about every weekend in the summer Mom had us out doing something.

The first day of Summer has passed and now the days begin to get shorter. Momma Said, “Time marches on and that is one thing we cannot do anything about, as far as us mere mortals know.” I am sure out there somewhere there are beings that can do just that, stop or reverse time. We think we know so much but there are vast universes out there where we are probably considered as primates.

There is proof that there have been visitors here from outer reaches but we just don’t understand so much of what they have to teach. There are places on earth where rocks have been surgically cut to fit together and other phenomena that we cannot explain. Those events happened a long time ago and there is nobody left to explain.

Our 250th Birthday Celebration is fast approaching and if you are traveling, I hope you stay safe and enjoy all the festivities. Momma Said, “Just be careful with the fireworks and enjoy the show.”

Cherry Delight

Crust

1 stick unsalted butter, melted, 1/2 cup

2 ½ cups graham cracker crumbs

¼ cup granulated sugar

Can also use pre-made crust

Filling

16 oz. cream cheese, softened

1 cup powdered sugar

1 tsp. pure vanilla extract

1 ½ containers cool whip, 12 ounces total

two 21 oz. cans cherry pie filling, use 1 & 1/2 cans

Instructions

In a mixing bowl combine all the crust ingredients – the melted butter, graham cracker crumbs and granulated sugar. Stir until thick.

Using your fingers, firmly press the crust into a 9×13 pan.

In a separate mixing bowl, beat the cream cheese with an electric mixer for 90 seconds, until fluffy.

Beat in the powdered sugar and vanilla extract. Add in 1 & 1/2 containers of cool whip, mix. Spread this mixture evenly over the crust.

Add the cherry pie filling, carefully spooning and spreading over the filling. You don’t want the pie filling to mix into the cream cheese layer. You can use 1 & ½ cans or full 2 cans.

Refrigerate for at least 2 hours or overnight. The more time this dessert spends in the refrigerator, the more it will firm up and improve in texture.
