It has been a year since I lost my best friend in the world. I still catch myself reaching for the phone to call her and then reality hits and it really hurts. Momma Said, “The most beautiful flower is always picked first.” I miss you Dee Gee and hope to see you again one day.
The world keeps revolving it just has one more star to shine down upon it. Blessings to her family, and to let them know, I miss her too. She was an amazing person and taken away from us way too soon. Momma Said, “Friends like her seem to come along only once in a lifetime.”
Thanksgiving is over and now comes the big Christmas push. It seems like such a hassle anymore. By the time Christmas gets here, I am so tired of the ads on TV, the BIG sale for this or that gadget, that I am glad to see it just go away. People have forgotten what the meaning of the season is. It is really sad to see people fight over things at a sale. That is the biggest problem I see, it is just stuff. Not something important, just the latest phone or IPad.
People don’t seem to see that the world is falling apart around them and they would rather go to a big sale than spend time together. There are two words in the English language that do not seem to go together today and they are, Family Unit. It does not exist anymore, everyone is sitting around with their nose stuck in some piece of computer technology or the other and they don’t pay attention to anything going on around them.
I don’t think I was cut out for the world of technology. Things are moving too fast for me to keep up. The thing that scares me most is how criminals are using this technology to do unspeakable things. I just wish society would slow down just a little because life is going by so fast, people are missing the most important part… each other.
DO NOTHING CAKE
INGREDIENTS
Cake:
· 2 cups all-purpose flour
· 2 cups granulated sugar
· 2 eggs, slightly beaten
· 1 teaspoon vanilla
· 1 teaspoon baking soda
· ½ teaspoon salt
· 1 16oz can crushed pineapple with juice
Icing:
· ½ cup (1 stick) unsalted butter
· 1 cup sugar
· ⅔ cup evaporated milk
· 1 cup chopped nuts (pecans or walnuts)
· 1 cup shredded coconut
INSTRUCTIONS
Preheat oven to 350 degrees (F).
Prepare a 9×13 baking pan with cooking spray.
In a large bowl, whisk together all of the cake ingredients until completely combined.
Pour into pan, and bake for 30 minutes or until a cake tester comes out clean. Don’t overbake.
During the last 10 minutes of baking, prepare icing.
In a medium saucepan over medium heat, melt butter.
Add sugar and evaporated milk, and stir to combine.
Bring to a boil and cook for 5 minutes.
Add nuts and coconut.
Pour icing over warm cake.
