Mom had so many friends that it would be hard to count them all.  She was the kind of person who would walk up to a total stranger and within five minutes she would know them like an old friend.  She would talk to anyone and they would reciprocate in kind.  Momma Said, “Tell me your secrets and I will tell you mine.”

She would know everything about them and they were happy to talk to her.  When we would go to bowling tournaments in other states, she would have the entire bowling alley entranced.  I don’t know how she did it but she had a personality so big that you could not help but notice her.

She had friends that she kept in contact from all over the US.  And friends close to home as well.  Momma Said, “Friendship isn’t about who you have known the longest, it is about who walked into your life and said, “I’m here for you and actually proved it.”  That was the kind of friend Mom was, she would drop what she as doing and help anyone she could.

I have seen her jump into many dangerous situations to help a total stranger.  She worked at the hospital and she would not hesitate to run to anyone’s aid.  I did not inherit that trait from her, it is very hard for me to talk to people I don’t know.  But anyone out there that needs help I will help if I can. 

 Air Fryer Bacon Wrapped Candied Carrots

Ingredients

  • ½ lb. maple bacon 6 strips
  • 6 carrots large
  • ¼ cup brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¼ teaspoon dried thyme
  • PAM or olive oil cooking spray

Before You Begin

  • This recipe can easily be doubled, you will want to work in batches if so.
  • You do not need to preheat your air fryer. Place the bacon wrapped carrots in and turn on. The extra minute or so to warm up will not ruin the recipe.

Instructions

  1. Peel and wash the carrots. You can leave the ends on or trim them off. Check to be sure the carrots fit into your air fryer before wrapping with bacon.
  2. Dry the carrots with a paper towel.
  3. Wrap one piece of bacon tightly around one carrot. Lay the carrots end-side down on the air fryer grate, to keep the bacon from curling up while cooking.
  4. In a small bowl whisk together the brown sugar, salt, nutmeg, and dried thyme. For less of a texture top, you can add ⅛ cup of olive oil and make this a brushable topping.
  5. Air Fry at 385F for 11 minutes. After 6 minutes, open and sprinkle the carrots with your brown sugar mixture – or brush if using the brushable version.
  6. Bring back to the air fryer and continue to cook until finished. Top with fresh thyme if desired.
