I have a lot of pet peeves but the most irritating is when you try to pass someone on the highway that is just poking along.  As soon as you pull out to pass they speed up.  They will do that and then get back to a no passing zone and slow down again.  Momma Said, “Road rage has no limits, just saying.”

I try to be a courteous driver but it is becoming increasing harder all the time.  I really love the hurry up and pull out in front of you drivers that only go one block and pull in.  Or the people that pass everyone on a five lane highway and then cut clear across to exit.  I told you I have a lot of pet peeves so I will just stop here. 

I don’t travel much just to work and back or to go visit my brother so I try to limit my rage to talking to the dog about how crazy everyone is.  Momma Said, “Is that not the pot calling the kettle black?”  That is another one of mom’s favorite sayings and I find myself using it a lot these days.  

I stopped at the store this morning and when I got back to the truck and started the engine and turned to Raven and said, “Ok, girl, we need to make tracks” not realizing what I had said until later.  There are so many sayings from my childhood that people today just look at me and ask, “What does that mean?”  Momma Said, “Just go with the flow and don’t rock the boat.”  See what I mean.

Cajun Spiced Snack Mix

INGREDIENTS

  • ½ CUP butter melted
  • 2 TABLESPOONS Cajun or Creole seasoning
  • 2 CUPS mini wheat thin crackers
  • 2 CUPS peanuts
  • 2 CUPS mini pretzels
  • 4 CUPS plain popcorn

  • Cajun Seasoning:
  • 2 TEASPOONS salt
  • 1 TEASPOON cayenne pepper
  • 1 TEASPOON garlic
  • 1 TEASPOON paprika
  • ½ TEASPOON oregano
  • ½ TEASPOON thyme
  • ½ TEASPOON onion powder
  • 1 TEASPOON black pepper

INSTRUCTIONS

  1. Pre-heat air fryer to 370ºF.
  2. Combine the melted butter and Cajun spice in a small bowl.
  3. In a large bowl, combine the crackers, peanuts, pretzels, and popcorn. Pour the butter over the mixed snacks and toss evenly to coat the mixture.
  4. Air-fry the snack mix two batches. Place half of the snack mix in the air fryer basket and air-fry for 8 to 10 minutes until lightly toasted. Toss the basket several times throughout the process for even cooking.
  5. Transfer the snack mix to a cookie sheet and cool completely. Store in an airtight container for up to one week, or place in gift bags with tags and ribbons for gift giving.  Also great for tailgating parties.
