As the days blend together and I watch from a safe distance, I see people already becoming lax in the face of this pandemic. I don’t understand why people would want to expose themselves to risk just to go to the beach. I watch the news and the beaches that are open are packed with people, young and old. It is hard to think they could start another round of this virus so soon.
Maybe I am facing my own mortality more closely but I think it is insane for people to want to expose themselves and others this way. The health care workers are still reeling with the onslaught of the first round and I don’t think they can take another so soon. They are out of supplies and people are still dying every day. People need to stop being so selfish and think of these poor health care workers who have not stopped since the beginning.
If you want to be outside, instead of going to the beaches and be in a herd of people, go camping and enjoy nature. You don’t have to be in a mass of people to be outside. Some people need that human contact but for me, I am happiest when I am alone. I don’t like crowds and I am just fine being with my animals and keeping myself healthy. I value my life more than taking that risk of exposure. Momma Said, “I am scared just to go to the grocery store.”
I hope a vaccine is discovered soon and we can breathe a little easier. Worldwide there are now over 3 million cases and the US has over a million. That is one third of the worldwide cases, so what does that tell you about us as a society. I think people are taking this too lightly and as the old saying goes, it will come around and bite you in the a$$. I am not going to be hasty and risk my health for anything. So everyone stay safe, keep off the beaches and take a walk in the woods.
One Pan Paprika Chicken Thighs
Ingredients
7 skinless chicken thighs
2 tbsp. of olive oil
1 tbsp. of smoked paprika
1 tsp. of minced garlic
Pepper to taste
2 sprigs of thyme
1 tsp. of salt
1 small chopped onion
1 cup of baby carrots
10 small potatoes cut in half
2 tbsp. all purpose flour
1 cup of chicken stock
Instructions
Place the chicken in a zip lock bag.
Add in the olive oil, paprika, garlic, salt, pepper, and thyme.
Seal the bag and massage until the chicken is fully covered.
Add oil to a pan over medium high heat and place the chicken in.
Fry for 2 to 3 minutes on each side.
Add in the chopped onions, baby carrots and potatoes.
Toss until the onions become translucent.
Place the flour in and toss.
Pour the chicken stock in, reduce the heat, and simmer for 20 minutes.
Plate and enjoy.
