The Parsons Advocate

I would like to introduce you to my three little nuggets that survived the summer.  This is Harry (for obvious reasons), Bob and Juliette.  I had seven little gems to start with but for reasons due to weather and bugs they did not survive.  All of them were a surprise to me as you will remember from my spring reports.  I still have no clue where they came from because I did not have any pumpkins last year.  Momma Said, “Little surprises in life make it all worthwhile.”

I have started a couple new projects and as I progress and get better I will give you some samples peeks.  My neighbor is helping me but he is suffering some health issues and is limited to his time in the shop.  I will try to press onward and learn some of this stuff on my own.  It will be an adventure so stay tuned to further reports.  Momma Said, “If you don’t push forward you fall behind and the lion always gets the stragglers.”

I try to stay active and do something even if it is of no use to anyone except me.  I have always been active and it is hard for me to stay still.  Now in my advanced years (ha, ha) it is really tough to stay still because it is hard to get going again.  Too much brawn, and not enough brain, over the years has really taken a toll on the ole bod.  I have to stay in idle mode and not turn the engine off because it is hard to get the motor started again.

Again summer has slipped away and fall will soon be upon us.  I don’t like to see things die off for the season but you must have death to have rebirth.  The seasons keep turning and so do we, I will soon be another year older and it is hard to believe that I am well past the half century mark.  I just thought about that and that really makes me want to stay active.  I would leave you with a pumpkin recipe this week but I don’t want to traumatize my little nuggets so that will come later.

ULTRA Crispy Air Fryer Chickpeas

Crispy air fryer chickpeas are the tastiest and crunchiest snack you will find. Using the air fryer cuts the cook time down to 15 minutes, and they are so much crispier than in the oven! Vegan and gluten-free, these crispy roasted chickpeas are an awesome healthier snack.

Ingredients

  • ▢19 oz. can of chickpeas (drained and rinsed)
  • ▢1 tablespoon olive oil
  • ▢⅛ teaspoon salt
  • ▢¼ teaspoon garlic powder
  • ▢¼ teaspoon onion powder
  • ▢½ teaspoon paprika
  • ▢¼ teaspoon cayenne (optional)

Instructions

  1.      Heat air fryer to 390°F / 200°C.
  2. Drain and rinse chickpeas (no need to dry). Toss with olive oil and spices.
  3. Dump the whole batch of chickpeas in the air fryer basket. Cook for 12-15 minutes, shaking a couple of times.
  4. When chickpeas are cooked to your liking, remove from air fryer, taste and add more salt and pepper to taste.
  5. Store in an open container. Incorporate  in salads or eat as healthy snack.
