Momma Said

When did I become the lady with my rear in the air? I am talking about working outside. I used to see the “older” woman out working, bent at the waist with her bum in the air, toiling away with all the blood rushing to her head. I’ll never be like that I remember saying to myself. Momma Said, “Never say never, it will come around and bite you.”
I always bent at the knee and worked all day, get up and walk away from the job like it was nothing. Ha Ha, it doesn’t work that way anymore. The old knees don’t seem to want to bend, so here I am with my butt to the heavens and blood pounding in my head. Then I stand up and the world goes “TILT”.
When you are young, you wish for time to hurry up so you are old enough to do all the exciting things of life. Then when time rushes by, you look up one day and say, “Where have all the years gone.”
I wish now I could go back in time and undo some of the things I have done. Have a chance to do all those things differently. Momma Said, “Savor time while it is at hand.”
Life goes by so fast in this day and age that in the blink of an eye you are past your prime and looking back at things wishing they could be different. Children age and go their separate ways, friends drift apart with hectic lives, and you find that time has simply slipped away. So here I am, the “older” woman with my butt in the air. I am sure there are people going by seeing that sight and saying, “That will never be me.” Guess again.

CHOCOLATE PEANUT BUTTER
OOEY GOOEY BUTTER CAKE

INGREDIENTS
Cake
· 1 Chocolate Cake Mix
· ½ cup butter – melted
· 1 egg
2nd Layer
· 8 Peanut Butter Cups – large one
· 3 small Butterfinger Candy Bars
Cream Cheese Layer
· 1 (8-ounce) package cream cheese, softened
· 1 cup peanut butter
· 3 eggs
· 1 teaspoon vanilla
· ½ cup butter, melted
· 4 cups confectionery sugar
Chocolate topping
· ½ cup chocolate chips
· 1 tablespoon vegetable or canola oil

INSTRUCTIONS
Preheat oven to 350 degrees, 325 degrees if using a glass pan.
Combine the cake mix, egg and butter together. Beat until it is combined. Spray a 9 x 12 pan with cooking spray and then put the cake mix layer over the bottom. Pat it down.
Cut the large peanut butter cups into 4 pieces. Roughly chop the Butterfingers. Spread evenly over the cake layer.
Combine the cream cheese, vanilla and peanut butter together until combined. Add the eggs one at a time and mix them in. Add the butter. When this is all combined together add the confectionery sugar. Spread evenly over the candy bar layer.
Bake for about 50 minutes. I used a glass pan and it took just over an hour. The mixture will be puffed up in the center when done. It will jiggle just slightly. Remove from oven and let cool.
Melt the chocolate for 1 minute in the microwave. Add the oil. Stir until combined. Spread over the top of the cream cheese layer.
Note: This cake will not be set until it is puffy in the middle. Because these cakes are so dense the baking time will vary from oven to oven. If you are baking it in a glass pan, bake it at 325, it can take as long as an hour and 20 minutes to bake. A tester will pull out clean also when it is done.
