It won’t be long until we can put another year down in the books.  This year has just flown by.  In just a couple weeks it will be the first day of winter and it feels more like spring, (so far).  Weather is a fickle thing, one day you are basking in sunshine and the next up to your ankles in mud.  The dogs track in so much mud when it is wet that I just leave the mop and a bucket by the back door.


I cut the hair off the bottoms of their feet last week because it was acting like a sponge. Momma Said, “What a mess.”  Bailey is a big dog with big feet and she sure knows how to make a mess.  She is good to stand still and let me wipe her feet but the trick is to get her to stop in the first place.

So far, fall has been dry for our area and unseasonably warm.  Not so good for the ski resorts though.  They may still be making snow at night when the temperature drops enough. I wish them well and hope their season is profitable, but they can keep the snow at the resort.

With this warm weather I could see Mom still mowing grass.  She would mow until the snow would fly.  She was the first in the spring to mow and the last in the fall or winter as the case may be.  I find myself procrastinating more and more these days to get jobs done and Mom didn’t know the meaning of the word.  I am sometimes ashamed of myself for putting things off.  Momma Said, “Not enough hours in the day, just do it and be done with it!”


Slow Cooker Broccoli Beef

Super easy Slow Cooker Broccoli Beef! The sauce is AMAZING – so much better tasting and healthier than takeout!

Ingredients

  • 1.5 pounds flank steak, thinly sliced and chopped into 2 inch pieces
  • 1 cup beef broth
  • ⅔ cup low sodium soy sauce
  • ⅓ cup brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • ¼ teaspoon red chili flakes (optional)
  • 4 cups broccoli florets
  • 2 tablespoons cornstarch + 4 tablespoons cold water

Instructions

  1. Grease the inside of a slow cooker. Add steak, beef broth, soy sauce, brown sugar, sesame oil, garlic, and chili flakes. Cover and cook on high for 2-3 hours or low 4-5 hours.
  2. Just minutes before serving, uncover the slow cooker. In a small bowl whisk corn starch and water until dissolved. Add to slow cooker and stir. Cover and allow to cook another 20-25 minutes.
  3. Just before serving, place broccoli in a large Tupperware container, fill with ½ inch of water, and place the lid on in an off-set manner so that the container can vent. Microwave on high for 3 minutes. Drain, stir broccoli into slow cooker and serve.

Notes

For a bit of a spicy kick, add a full 1-2 teaspoons of crushed red pepper flakes!
