I have some sad news to report this week.  I lost one of my kitties this past week to a hit and run driver.  My neighbor found her last Thursday evening and let me know.  I am sick at heart because her sister was killed in the same spot. She liked to go out at night and I didn’t even know she ventured down by the roadway.  She will be missed.


My other kitty is lost and when I get home from work she is on my lap all the time.  Momma Said, “I know for sure that animals mourn just like people and I will help her through this.”  She was Amber’s kitty, they loved on each other all the time.  I gave her the best life I could while she was with me.  She had a rough start but that was in the past, she lived the best life possible.

I know my pets are animals they are not “my children” so to speak.  But I treat them well and try to be a responsible owner.  They get their vaccines when needed and any other medical attention they may need.  They are fed well and treated even better.  I would never abuse my animals and can’t stand to see others do things like that.

I will eventually get another kitten (or two) but for now Katie Kat is the Queen of the domain.  Momma Said, “I don’t think she would approve of a furry little sister.”  She gets along well with the dogs, so she can pester them and keep them on their toes.

Alabama Pecan Bread

1 hour to prepare serves 12-16

INGREDIENTS

  • 2 cups pecans, finely chopped
  • 1 1/2 cups self-rising flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

PREPARATION

  1. Preheat oven to 350º F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, use a wooden spoon to stir together sugars (white and brown), eggs and oil until fully incorporated.
  3. Stir in flour and salt until incorporated, then mix in vanilla and fold in pecans.
  4. Pour batter into greased baking dish, then place in oven and bake for 30-35 minutes, or until toothpick inserted in center comes out mostly clean.
  5. Remove dish from oven and let cool at least 15 minutes before slicing and serving.
