This weather sure will make the ramps grow.  Mom would be in her element.  I just wonder if she would still be able to get into the woods if she was still with us. I just could never picture her as old.


In that I mean too old to get around and do all the things she always did.  I could not see her sitting in the house all day and not out on her lawn mower or in the woods.  I saw how Gran changed as she aged and I could never see mom in that light.

Time is something none of us can stop and it would have been inevitable that she would have slowed down.  That would have been hard for me to accept.  As a child, I saw Mom as a sort of “Super Hero” there was nothing she couldn’t do. She was invincible in my child’s outlook on the world.  As I grew I was the kid that took most after Mom.  I was outdoors all the time and as an adult I worked hard like Mom did.  Momma Said, “The best type of flattery is imitation.”  I think I modeled my life after Mom.

I grew up with the attitude that, if you wanted it done right do it yourself.  I never asked for help doing things.  Sometimes it got me in trouble and then I would bow down and ask for advice.  But most of the time I just forged ahead.  Momma Said, “Da** the torpedoes, full steam ahead!”

I am not afraid to try and do something that I have never done before.  I have fixed things around my house that have broken instead of throwing it away. Sometimes it works and sometimes it doesn’t, but if I didn’t try I would never know.  Mom was a very strong woman in her own right and I admired her for that.  She taught me to be self-sufficient and it has benefited me greatly.  My only regret is she still had a lot to teach me and was taken away far too soon.  Don’t waste a minute of time if you still have your parents and let them teach you from their mistakes.  Momma Said, “That is why the mistake was made in the first place, so you could learn a lesson.”  Just don’t make the same mistake twice.


PUFFY LEMON COOKIE

INGREDIENTS
  • 1 cup (2 sticks) butter
  • 2 cups granulated sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 tsp lemon zest (zest of about 2 lemons)
  • 4 T. lemon juice (about 1 1/2 lemons)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3 cups flour
  • 3/4 cup powdered sugar to roll cookies before baking
INSTRUCTIONS
  1. Preheat oven to 350 F
  2. Cream together butter and granulated sugar until light and fluffy in large bowl
  3. Add in vanilla, eggs, lemon zest, lemon juice and mix until combined.
  4. Mix in salt, baking powder, baking soda, and flour until just combined.
  5. Roll heaping tablespoons of dough in powdered sugar until coated. Place on parchment paper lined baking sheet 3 inches apart and bake for 9-11 minutes.
