Saturdays were a special time for us when we were kids. Number one, no school, and number two sometimes, just sometimes, Mom would take us to town. On those Saturdays, the movie theater in town would be having a food drive so we could get in for the afternoon with a can of food. Momma Said, “Four cans of food is a cheap price to pay for a whole Saturday afternoon away from four rowdy kids.”
The movies were most always animated, but back then there was always close to a half hour of cartoons before the main feature. That was the best part because we would always get up early, watch cartoons on TV and then go to town to the movies. Our TV time was limited because we could only receive two channels and on days we could get outside we never sat in front of the boob-tube anyway.
Even today it is hard for me to sit in the office on a beautiful day. We are lucky because in our office we can open the windows on pretty days and let the fresh air in. “The boss” prefers air conditioning, but Momma Said, “Why pay for it when you can get fresh air for free by opening the doors and windows.”
After being cooped up all winter, I am ready to throw open the shutters and let spring come in with a bang. Day Light Savings Time is back, so the days will be longer and the more sunshine the better. It is time to be rejuvenated and rejoice in the warmer weather.
I hope in your area the snow and ice will soon be a thing of the past and life can function at a normal pace once again. Pecan Caramel Cheesecake Cookie Cups
· 1 package (16 oz.) Nestle Toll House Ultimates Refrigerated Pecan Turtle Delight Cookie Dough
· 2 packages (8 oz. each) cream cheese, at room temperature
· 1 can (14 oz.) Nestle Carnation Sweetened Condensed Milk
· 2 large eggs
· 2 tsps. vanilla extract
· 1/3 cup caramel ice cream topping
· ½ cup chopped pecans
· 2 Tbls. Nestle Toll House Semi-sweet Chocolate Mini Morsels
PREHEAT oven to 325 degree. Paper-line 24 muffin cups. Cut each square of dough in half. Place one piece of dough in each muffin cup.
BAKE for 10 to 12 minutes or until cookie has spread to edge of cup.
BEAT cream cheese, sweetened condensed milk, eggs and vanilla in medium bowl until smooth. Spoon about 3 Tbls. Cream cheese mixture over each cookie in cup.
BAKE for additional 15 to 18 minutes or until set. Cool completely in pan on wire rack. Refrigerate for
