I hope everyone took a few minutes last week to thank a veteran for their service. They sacrifice so much for our country and I think they deserve everyone’s thanks. We live in a country of unlimited freedom compared to some other countries around the world. Momma Said, “Everyone should appreciate our great country and if you don’t like it, go somewhere else to live.”

I think we need to stand united and stop all this petty bickering. Everyone has a right to their own opinion and everyone is not going to agree with everyone else. We are falling apart as a society. I watch the news every night and sometimes I feel like crying. Police are trying to protect the public and they are getting in hot water everyday.

I don’t know how they get the courage to put that uniform on every day, leave their families and put their selves in harms way. Now they have to worry about getting in trouble or worse yet killed because they have to hesitate before defending themselves in a crisis. Momma Said, “My heart goes out to all the men and women who wear the uniform.”

I go on a lot about this subject, but I love this country so much and it hurts me to the bone to see how people disrespect everything these days. They don’t respect the flag; the people who defend it, what this great nation stands for, and worse of all, people don’t respect each other any more.

I will end my rant this week with a recipe that can serve one or one hundred. I am going to give you the ingredients and you can adjust them for how much you want to make. This is a great snack or a wonderful party appetizer. So mix as little or as much as you think you want. When I am in a hurry, I use canned chicken. You find it at the store alongside the tuna. If you want to use fresh chicken, I use skinless, boneless breasts or you can use some of the leftovers from your upcoming Thanksgiving turkey. So mix up a batch and enjoy.

 

Oriental Chicken Salad

 

Canned chicken or fresh cooked chicken breasts or turkey

Mandarin oranges

Green seedless grapes, halved

Walnuts

Cranberries or raisins

Miracle Whip

 

Mix all ingredients together and refrigerate. Eat with Club Crackers or on pita bread, croissant or flat bread as a sandwich.
