Now we have over two million Ukrainians displaced by this senseless bombing of their country.  I feel so bad for these people, seeing them on TV taking only what they can carry, leaving behind family valuable, memories, photos and most of all their homes.  Even if this stops now it will be years of rebuilding to get them home again.  

You just don’t know what you truly have until literally everything is gone, your way of life, families separated and family members going off to fight not knowing what will happen to them.  I heard on the news that, business men, doctors, nurses, laborers and anyone who can hold a weapon is volunteering to go to the front and defend their country.  Momma Said, “When the going gets tough, the tough get going!”

The fallout from this crisis is being felt here at home as well.  Gas prices in our area are topping out as of the time that I write this at $4.29 a gallon.  I thought the president was going to release so many millions of gallons of reserve oil to head off this mess.  If we have that much in reserve why are the prices continuing to climb.  I am not happy with the state of our union right now.

I know that sounds petty to complain about such things when the state of the world hangs in the balance and we have a crazy man with his finger on the scales.  This could tip in any direction and it looks like Putin is not backing down from anything.  For some reason this rings a bell from another time with another crazy man and it occurred in Germany.  Momma Said, “The only thing missing right now are the concentration camps.”

BLOOMNG ONION IN AIR FRYER

INGREDIENTS

1 large yellow onion

3 large eggs

1 c. breadcrumbs

2 tsp. paprika

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. kosher salt

3 tbsp. extra-virgin olive oil

 

FOR THE SAUCE

2/3 c. mayonnaise 

2 tbsp. ketchup

1 tsp. horseradish 

1/2 tsp. paprika

1/2 tsp. garlic powder

1/4 tsp. dried oregano  

Kosher salt

 

DIRECTIONS

  1. Slice off onion stem and set onion on flat side. Cut an inch from the root down, into 12 to 16 sections, being careful not to cut all the way through. Flip over and gently pull out sections of onion to separate petals. 
  2. In a shallow bowl, whisk together eggs and 1 tablespoon water. In another shallow bowl, whisk together breadcrumbs and spices. Dip onion into egg wash, then dredge in breadcrumb mixture, using a spoon to fully coat. Drizzle onion with oil. 
  3. Place in basket of air fryer and cook at 375° until onion is tender all the way through, 20 to 25 minutes. Drizzle with more oil as desired. 
  4. Meanwhile make sauce: In a medium bowl, whisk together mayonnaise, ketchup, horseradish, paprika, garlic powder, and dried oregano. Season with salt.
  5. Serve onion with sauce, for dipping.
