Momma Said

I have a white robin in my yard.  At first I thought it was a dove then it started to sing and I saw the front of it.  The breast is not as red it is more of a pink color. It is hopping around with the other robins looking for a mate.  It is really a sight to see.  Momma Said, “God creates beauty around every corner.”


I showed it to my neighbor and he said he had seen a black squirrel just the day before.  Nature is going crazy I just hope I don’t see any pink elephants.  I am seeing a lot of fat goats in the field just down from my house.  It won’t be long before the kids are jumping and playing around.  They are so adorable when they are first born so little but so feisty and fearless.

The daffodils have finally started to bloom now it is calling for more snow.  I am about done with this winter type stuff.  It is supposed to be spring I am ready for some springtime like weather.  I am sick of rain and mud.  Momma Said, “I just want some sunshine and warmth.”

I did hear a lawnmower running in the neighborhood today.  I guess that is a good sign at least the grass is growing.  I wouldn’t know at my house all I have is a giant mud hole for a yard.  I took a bale of straw out last week and spread it around.  At least it is covering some of the mud and it is not being carried into the house by “You Know Who”.  I had to close a small area in with a fence to keep her out of it but guess where she was just minutes after I came into the house.  You got it she got in the fenced area but couldn’t get out.  Momma Said, “I miss the good old days, hopefully she will grow out of it.”  P.S.  I am not going to hold my breath.


Strawberry Heaven Recipe

INGREDIENTS

SERVINGS 15
1 angel food cake
1 (16 ounce) container Cool Whip
8 ounces cream cheese
1 cup sugar, divided
1 teaspoon vanilla extract
1 quart fresh strawberries, sliced
3 tablespoons cornstarch
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 tablespoon lemon juice
1 cup water

DIRECTIONS

Combine in medium saucepan 1/2 cup of sugar, cornstarch, Jello, lemon juice, and water.
Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
Set aside to cool slightly.
Stir in sliced strawberries.
Tear angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip.
Press into 9×13 inch pan (I use glass so you can see the pretty layers).
Set aside.
Combine cream cheese, 1/2 cup remaining sugar, and vanilla in mixer bowl.
Beat until smooth.
Stir in remaining Cool Whip.
Spread evenly over cake layer.
Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly.
Refrigerate 2 to 3 hours before serving.
Note: You may substitute a 16 ounce bag of frozen whole strawberries, thawed and chopped, for the fresh strawberries.
